Ingredients

  • 1 cup navy beans soaked
  • 1 cup black beans soaked
  • 1 cup cannellini beans soaked
  • 1 onion peeled and chopped
  • 1 red pepper chopped
  • 1 garlic clove peeled and chopped
  • 1 cup tomato puree
  • 1 jalapeno pepper de-seeded and chopped finely
  • ½ teaspoon cinnamon
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 2 teaspoons sugar
  • 1 tablespoon white vinegar
  • ½ cup red wine
  • 14 oz tinned tomatoes
  • 2 cups vegetable broth
  • 1 cup canned sweetcorn
  • ½ cup cilantro chopped

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • Add all of the ingredients except for the cilantro and sweetcorn into a casserole dish (or a slow cooker if you prefer.) Stir well to combine.
  • Cook for 2 hours covered in the oven (or on a low heat for 6 hours if you are using a slow cooker.)
  • Remove from the cooker and stir in tinned sweetcorn and chopped cilantro. Serve immediately.

Serve with crusty bread or rice to use it as a meal. Or use it as a side dish to meats of all types.
