Spicy Chipotle Baked Pumpkin

Ingredients

  • 2 lb fresh pumpkin
  • 2 tablespoon olive oil
  • ½ teaspoon turmeric powder
  • 1 teaspoon garlic powder
  • 1 tablespoon chipotle powder
  • ½ teaspoon salt

Instructions

  • Preheat oven to 200 degrees Fahrenheit
  • Remove seeds from the pumpkin but keep the skin on
  • Cut the flesh into rough cubes around an inch in size
  • Toss the pumpkin in a bowl with the remaining ingredients until well coated
  • Place onto a baking sheet and bake for 25-30 minutes in the preheated oven
  • Serve immediately or blend to make a puree
