Spicy Chipotle Baked Pumpkin

- 2 lb fresh pumpkin
- 2 tablespoon olive oil
- ½ teaspoon turmeric powder
- 1 teaspoon garlic powder
- 1 tablespoon chipotle powder
- ½ teaspoon salt
Preheat oven to 200 degrees Fahrenheit
Remove seeds from the pumpkin but keep the skin on
Cut the flesh into rough cubes around an inch in size
Toss the pumpkin in a bowl with the remaining ingredients until well coated
Place onto a baking sheet and bake for 25-30 minutes in the preheated oven
Serve immediately or blend to make a puree
