Chipotle Honey Vinaigrette

Ingredients

2 chipotle peppers in adobo sauce
3/4 cup olive oil
1/3 cup red wine vinegar
1/4 cup honey
3 cloves garlic chopped
1 1/2 teaspoon salt
1 teaspoon pepper
1/2 teaspoon cumin
1/2 teaspoon ground oregano
squeeze of lime optional

Instructions

Place all ingredients in a blender, and blend until smooth. Or, using a food processor, place all ingredients in a large bowl and process until smooth.

Notes

Want an earthier chipotle honey vinaigrette? Add a teaspoon of adobo sauce to the recipe, without additional chipotle pepper. Or, if you prefer it spicier, feel free to include a portion of chipotle pepper with the adobo sauce.
