Any green chilies can work here - choose based off of your heat tolerance. Anaheim peppers will provide a mild simmering heat. Jalapeño pepper have a low-medium spiciness that's comparable to typical Sriracha (though this sauce can be spicier). Serrano peppers are often double the heat of jalapeño peppers, so use them for extra kick! You can also mix and match chilies.
