In a large mixing bowl (if using a food processor), add the garbanzo beans, chipotle, tahini, olive oil, and adobo sauce. Pulse blend using a food processor until smooth. (if using a blender, simply place the ingredients into the blender).
Add the lemon juice, minced garlic, and salt. Stir to combine.
Taste the hummus and adjust as needed to preferred flavor. If adding more chipotle, tahini, or garlic another round of blending is in order to smooth the hummus.
Transfer the hummus to a serving bowl and sprinkle with oil and/or paprika for color (or additional chopped chipotle pepper if you prefer a spicier/smokier hummus).
