Add oil, garlic, and finely diced onion to the frying pan and cook stirring occasionally for 5 minutes.
Add the chili pepper and black beans to the pan and stir to combine.
Lower the heat on the frying pan to medium, then cook the black bean mix for 10 minutes, stirring often.
Prepping and cooking the burritos
Add the black bean mix and chopped salad vegetables to the tortilla wraps, then fold them into a burrito shape. Place each burrito in a baking pan, then sprinkle the jack cheese over each burrito.
Place the baking pan with the burritos in the preheated oven and cook them for 2 minutes (or until the cheese has melted.)
Serve alone or with some Mexican rice, more salad, or some pickled jalapenos.
