Spicy Black Bean Burritos

Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon garlic crushed
  • 1 yellow onion
  • 1 serrano pepper or another pepper of choice, seeds removed and finely chopped
  • 1 can cooked black beans drained
  • 6 tortilla wraps
  • Selection of salad vegetables chopped (tomato and pepper work well)
  • 1 cup jack cheese shredded (strong cheddar also works well)

Instructions

Making the black beans

  • Preheat the oven to 300 degrees Fahrenheit.
  • Place a frying pan over medium-high heat.
  • Add oil, garlic, and finely diced onion to the frying pan and cook stirring occasionally for 5 minutes.
  • Add the chili pepper and black beans to the pan and stir to combine.
  • Lower the heat on the frying pan to medium, then cook the black bean mix for 10 minutes, stirring often.

Prepping and cooking the burritos

  • Add the black bean mix and chopped salad vegetables to the tortilla wraps, then fold them into a burrito shape. Place each burrito in a baking pan, then sprinkle the jack cheese over each burrito.
  • Place the baking pan with the burritos in the preheated oven and cook them for 2 minutes (or until the cheese has melted.)
  • Serve alone or with some Mexican rice, more salad, or some pickled jalapenos.
