Spicy Chicken Soup

Ingredients

  • 5 chicken breasts boneless and skinless
  • 6 cups chicken broth
  • 2 jalapeño peppers diced
  • 2 tomatoes diced
  • 1 red bell pepper chopped
  • 1 onion chopped
  • 1 package frozen corn
  • 1 can black beans 15.5 ounces
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin
  • Taco seasoning 1.25 ounce package
  • 2/3 cup rice

Instructions

  • Combine all ingredients (other than the rice) into a slow cooker, cover, and cook on low for 7 to 8 hours (high 5 - 6 hours).
  • Stir rice into the soup 1 hour prior to cooking completion and cover again.

Notes

Increase the overall spiciness by substituting the jalapeño peppers for serrano peppers.
