Jalapeño Coleslaw

Ingredients

  • 6 cups shredded cabbage
  • 3 jalapeño peppers seeds removed and diced
  • 3 medium tomatoes seeds removed and diced
  • 6 scallions chopped
  • 1/4 cup cider vinegar
  • 1/4 cup honey
  • 1 teaspoon salt

Instructions

  • Combine all ingredients and stir well.
  • For best taste, refrigerate for a minimum of two hours prior to serving.

Notes

Increase the heat, by either dicing the jalapeños with seeds still in or using serrano peppers instead.
